here), you'd think I only eat grilled cheese. Seriously, how many variations can I pin? From sweet ricotta and blackberry jam ones to savory avocado and egg breakfast ones, I have pinned them all! I do love a good grilled cheese. Especially on days when it is a bit chilly outside. This Italian version was inspired by leftovers in my fridge.
To make your own gather the following:
unslated organic butter
oat nut bread or other sliced bread for toasting
sun dried tomatoes, coarsely chopped
organic baby spinach
Melt a pad of butter in the skillet. Toast both sides of one slice of bread, and set aside. Repeat process with second slice. Add more butter to pan. Place bread back in skillet. Top with remaining ingredients and other slice of bread. Warm till cheese melts and bread is golden.
