wonderful wraps

Me and the carnivore often eat heavy dinners. I know, I know. We aren't suppose to. But, the truth is we both eat pretty light lunches. And since we eat lunch separately during the week, I get to indulge in some of my favorite foods that the carnivore would never get near. Recently I was craving potato salad (which may be the only way to prepare a potato that my meat and potatoes guy would never eat) and was looking for something to go along with it. I came across a veggie wrap on one of my favorite websites (www.thenest.com) and, decided that it would go great with my potato salad. Per usual, I tweaked the recipe a little. Here is what I came up with -

I sliced some red onion, a red pepper, and a zucchini (any of your favorite veggies will do though). I drizzled it with olive oil and then sprinkled it with fresh herbs from my garden (oregano, parsely, and basil to be specific). I broiled the veggies for a few minutes so they were still crunchy. I then added the veggies to a multi-grain wrap with some crisp lettuce, goat cheese crumbles, and cucumber ranch dressing. They were delicious, light, and packed in lots of nutrients. The veggies reheated nicely the next day too.

Serve up these warm wraps with a simple cool potato salad and chilled fresh fruit. You will be full, but not stuffed, with plenty of room left over for a big dinner!

  1. This sounds super yummy! Great idea to grill the veg first, not a lot of people do that when thinking of a simple wrap lunch sandwich. And with goat cheese and cucumber ranch dressing? Wow sounds delicious!
