This is a simple dinner for any night of the week. You pack in lots of vitamins with the sauce and peppers. Using whole wheat pasta helps sneak in even more nutrients. Just use real italian sausage for your meat eater and a spicy italian sausage link substitute for the vegetarian. Its as easy as that.
To Make this Main Dish:
Bring a large pot of salted water to boil
Add a box of penne until aldente
Toss with 2 tblsp. of olive oil
Add salt and pepper to taste
In separate pans saute sausage (1 pack each)
Add one seeded and sliced green bell pepper to each pan
Heat up your favorite jar of red sauce (or make your own)
Top pasta with a couple of sausage and some peppers
Pour sauce over generously
Top with grated parmesan if desired
Makes 4 servings (2 for vegetarians / 2 for meat eaters)
Serve this hearty pasta dish with a simple side salad (if you are lucky enough to have a carnivore that will eat lettuce) and a generous slice of your favorite artisan bread.
